Toasted Beef Tacos

Tacos are favorite treat for most of us since they are very delicious and nutritious at the same time. This recipe gives you the crunch of corn as we are going to use corn tortilla. This recipe is best when you toast your tortillas. Take a non-stick pan and heat it on high flame. Take your corn tortilla and dip it in a bowl full of water for a few seconds. Then take the tortilla out and place it in the hot pan. Heat it from one side until it gets flaky brown spots. Then repeat the process on the other side as well. After the tortilla is brown take it out and cover with a kitchen towel. Covering tortillas will make them moist and soft.

This dish is going to be spicy and its thick sauce will have a sour taste from a mixture of tomatoes and chiles. Let’s discuss the ingredients that this dish is going to need.

  •  Beef stock (unsalted) 1 1⁄4 cup
  •  Dried chiles 3
  •  Dried ancho chiles 3
  •  White onion 1 (roughly chopped)
  •  Ground cumin 1 teaspoon
  •  Can fire roasted diced tomatoes 14 ounces
  •  Garlic cloves 5
  •  Skirt steak 3 pound
  •  Salt (according to your taste)
  •  Black pepper (half teaspoon)
  •  Corn tortillas 20
  •  Fresh cilantro leaves 1 cup
  •  Radishes 4 (thinly sliced)
  •  Lime wedges 10

Take a microwaveable bowl and place the beef stock in it. Microwave the beef stock for about two minute at high setting. After its done take it out and place it in a slow cooker. Also add along the onions, tomatoes, cumin, garlic and chiles. Stir the ingredients and also add salt and pepper. Set the slow cooker on low settings and start cooking for about eight hours. After that your beef will be perfectly tender. Just take the steak out from the slow mixer and transfer it to a plate. Take two forks and start shredding the steak. It’s time to make our spicy sauce. For our sauce, remove the fat from the chile mixture in the slow cooker. After all fat has been removed, transfer this mixture to a blender. Always remember, if you are processing hot mixture make sure to remove the center piece of your blender lid. This will allow the steam to escape. In order to prevent splatters place a wet towel over the blender lid. Turn on the blender to start processing until the mixture becomes smooth. Take a pan and transfer the mixture in it. Start cooking your mixture and keep stirring. Cook for about 20 minutes on low flame until the sauce becomes thickened. Let’s make the beef mixture for the tortillas. Take a large bowl and add your shredded beef. Take two cups of your sauce, pour onto the beef and coat the beef evenly with the sauce. Your filling mixture is ready. Take your toasted tortillas and start topping them evenly with the sauce and also add radishes and cilantro as well. Toasted beef tacos are ready. Enjoy. Happy cooking
