Creamy Tomato Soup


  • Tomatoes 1kg
  • Garlic 6 cloves
  • Black pepper 1Tsp
  • Cayenne powder ½ Tsp
  • Dried Basil leaves 1Tsp
  • Salt as per taste
  • Olive oil for drizzling on tomatoes and garlic 1tsp
  • Olive oil for soup 1tsp
  • Onion 1 medium
  • Chicken stock 4 cups
  • Fresh basil leaves 5/6
  • Dried Thyme ½ Tsp
  • Red crushed chilies ½ Tsp
  • Parmesan cheese powder ½ cup

Let’s make Creamy Tomato Soup

On the baking tray, place tomatoes (Cut into two halves) and garlic bulb, black pepper powder, salt, dried basil leaves, and drizzle a few drops of oil over it.

Cover it with aluminum foil and bake it in preheated oven at 220c for 25-30 minutes. After 25 minutes uncovered it and discard the garlic covering. In a pot add 1tsp olive oil and one medium onion and mix well. Now add baked Tomatoes and garlic, Chicken stock, and fresh basil leaves, mix it well and bring it to a boil then blend the whole mixture with the help of a blender. Cook this mixture on medium-low flame for 15-20 minutes, and the soup will become creamy and thicker. Add dried thyme, and red crushed chilies and mix well. Soup is ready, pour it into a bowl and garnish it with parmesan cheese powder and fresh basil leaves.
