Cheese Zucchini Fritters

Courgette is a versatile squash rich in minerals and Vitamins, but considered one of the rich source of mineral called Potassium. It stimulates the production of brain chemicals like serotonin, which affects mood and melatonin, which helps to regulate your sleep cycle. The best way to eat zucchini is as raw like in salads but to satisfy the Asian taste buds we have come up with a tremendous recipe of Zucchini fritters.

The ingredients you are going to need are,

  •  Zucchini grated 2 cups
  •  Salt as per your taste
  •  All purpose flour half cup
  •  Egg1
  •  Mozzarella and cheddar Cheese half cup
  •  Onion half cup
  •  Spring onion one table spoon
  •  Fresh coriander handful
  •  Red chilli flakes half tea spoon
  •  Green chilies 2/3
  •  Dry coriander half tea spoon
  •  Black pepper powder half tea spoon
  •  Desiccated coconut one tea spoon
  •  Cumin half tea spoon

Steps to follow:

Grate Zucchini and sprinkle salt on it and leave it for good 10 minutes, you will notice zucchini will release water. Take muslin cloth and pour zucchini in it and squeeze out extra water. Chop all the vegetables. In all purpose flour add salt, black pepper, red chilli flakes, dry coriander, cumin desiccated coconut, egg, mozzarella and cheddar cheese and all chopped vegetables. Mix well Now heat oil in a frying pan for shallow frying. Take a spoonful of batter and pour it in a frying pan, press with a spoon to give it a shape of Pattie. Fry until it becomes golden brown. Don’t flip the side before 2 minutes. Serve it with green chutney or chilli garlic sauce.
